i've been trying to broaden my cooking repertoire by including whole chicken. don't get me wrong, i definitely eat meat, i just have a tendency to feel completely overwhelmed by the idea of cooking it. but, thanks to poncho (aka, my dad), i've been taught the ways of the fool proof chicken. nevermind the fact that it uses a half box of kosher salt, as this was/is the juiciest chicken i've ever had. let me reiterate that last point once more - THE juiciest chicken i've ever had.
salt-baked chicken (or as i like to call it, "cocaine chicken") recipe can be found here. but if you're adventurous, i highly recommend taking some ingredients from sunday supper's chicken + ramps recipe. namely, the inclusion of butter and additional herbs.

everyone should have a killer roast chicken recipe, yours looks awesome! my go-to juicy-chicken recipe has always been the zuni cafe chicken - it gets a dry brine for 3 days and it's sooo juicy with the crispiest skin...

DeleteI'm vegetarian and a lazy cook. I feel bad because it looks like bloggers are all a lot into cooking - but I just don't have enough patience. I always cook because I hate to eat food that comes from a package, I like freshly made dishes, but it has to be fast!!
ReplyDeletethere are definitely days when i could cook for hours (this usually happens on a sunday when the farmers market has whet my appetite), but during the work week it's just not going to happen. in other words, i hear you. thankfully summer is perfect for the lazy cook (aka me, mon-fri) since everything is in season and can be eaten raw without any embellishments. heyo summa summa! but bottom line? don't feel bad about not cooking.
Deletei haven't ventured out that far when it comes to cooking chicken, but if you say that it is the juiciest chicken you ever had, then i'm going to roll up my sleeves and get to work. the recipe sounds simple enough. thanks for sharing!
ReplyDeleteleyla, i promise you want be disappointed! take it from a chicken novice, i tried it, was wrought with skepticism, swore i'd somehow mess it up, took it out of the oven, cautiously cracked and removed the salt seal, and was devouring chicken in no time a la daisy randone.
DeleteI have a recipe for a salt bake in one of my cookbooks but i've never been daring enough to try it. I can't wrap my head around why it would be juicy with all that salt, but I believe you and now i want to try it.
